Ingredients
1 1/4 cup of self-raising flour
1/2 cup castor sugar
3/4 cup blueberries
3/4 cup milk
90g melted butter
1 large egg
Cinnamon Sugar Crumbs
4 tsp plain flour
2 tsp castor sugar
2 tbsp cold butter
1 tsp cinnamon powder
Instructions
1) Preheat oven to 200'c
2) In a large bowl, sift in flour and sugar. Then add in the blueberries and mix well
3) In a different bowl, whisk the melted butter, milk and egg lightly. Pour it into the dry mixture. Stir gently until the flour incorporates. Do not over beat or else the muffins will come out tough
4) Mix all the crumbs ingredients in a small bowl and pinch in the butter until they form like wet sand. Sprinkle them on top of the muffins
5) Bake it in the preheated oven for 15 minutes or until a pick comes out clean
ps. The cinnamon sugar crumbs are optional but I think they add some really yummy flavours to the muffins
