Kari Udang

Ingredients
20-30 udang besar
3 bawang merah
2 bawang putih
1 inci halia
3 tangkai daun kari
2 cinnamon sticks, buah pelaga, cengkih
2.5 tbsp curry powder mixed with some water to make a paste
1/2 cup water
1 1/2 cup santan
1 asam keping
Salt and sugar to taste

Instructions
1) Bersihkan and buang kepala udang
2) Potong and tumbuk bawang merah, bawang putih and halia. Panaskan minyak, tumis bahan-bahan tumbuk together with daun kari, cinnamon sticks, buah pelaga and cengkih sampai naik bau
3) Masukkan curry paste, tumis sampai naik bau. Then add in water, stir for about 5 minutes
4) Add in santan and asam keping, mix well sampai mendidih. Then masukkan udang-udang. Keep stirring sampai udang masak
5) Salt and sugar to taste, tutup api. Don't leave the udang too long atas api, nanti dia keras or the kulit will stick to the isi
