Chocolate Brownies

Ingredients
450g unsalted butter, chopped small
500g semisweet chocolate chips
170g unsweetened cooking chocolate
6 eggs
2 1/4 cup castor sugar
3 tbsp coffee granules
2 tbsp vanilla extract
1 1/4 cup all purpose flour
1 tbsp baking powder
1 tsp salt

Instructions
1) Preheat oven to 180'c
2) Fill water in a pot about an inch from the bottom and put a bowl on top of it. See that the bottom of the bowl does not touch the water. Turn on to low heat. Melt butter, 450g of the choc chips and the cooking chocolate in the bowl until smooth. Might take around 15 minutes. Bila dah melt, set aside to cool down to room temp



3) In a different bowl, add in the eggs, coffee granules, vanilla extract and sugar. Stir the ingredients, do not beat
4) In a bigger bowl, sift in 1 cup of the flour, baking powder and salt
5) In a small bowl add in the remaining flour and choc chips. Mix with your hand. This is to avoid the chips from sinking to the bottom of your pan



6) Once the chocolate and butter mixture has cooled down, add in the egg mixture and mix well. Then add the mixture into the dry ingredients (flour, salt, powder) and again mix well until the flour incorporates. Then stir in the floured choc chips
7) Grease well a baking pan and pour in the batter
8) Pop it into the oven for 20 minutes. Rap the pan on the rack a few times to let out trapped air. Continue baking for 10-15 mins until a pick comes out clean
9) Let cool to room temp, refrigirate for about 15 minutes and slice into squares



ps. You can add in about half a cup of chopped walnuts if you like
