Udang Masak Lemak Cili Api

Ingredients
20-30 prawns, depending on the size. I used Tiger Prawns which were huge
3 bawang putih
4 bawang merah
1 inci halia
3 batang serai
15 cili padi
1 tsp kunyit
2 helai daun kunyit, optional
2 asam keping
2 cups, about 800 ml santan
1 cup water
Salt and sugar to taste
Instructions
1) Tumbuk bawang putih, bawang merah, halia, cili padi with 1 tsp of kunyit until fairly lumat. Don't blend bc then you'll need extra water
2) Put the paste inside a pot with the crushed serai, daun kunyit, add 1 cup of water and asam keping. Bring to simmer for about 5 minutes
3) Add in the santan, stir well. Then add in the prawns. Kacau selalu so that the santan tak pecah lemak until the prawns are cooked through (they'll turn orange)
4) Salt and sugar to taste
5) Serve with ikan masin goreng and it also goes well with Sayur Campur Goreng
