Ketam Goreng Berlada

Ingredients
4 large crabs, cleaned and halved, marinated with kunyit
5 bawang putih
5 bawang merah
3 batang serai (optional)
3 senduk lada blend
1/2 cup air asam jawa
4 biji telur
Brown sugar
Salt and sugar to taste

Instructions
1) Goreng ketam dalam minyak banyak. Not too garing though. Set aside
2) Slice the serai, bawang putih and bawang merah thinly. Goreng serai first, halfway through, masukkan bawang putih and merah and goreng sampai garing. Set aside
3) Guna minyak bekas goreng serai and bawang tadi and masukkan 3 senduk lada blend and 1 tbsp brown sugar. Goreng for about 10 minutes sampai garing then masukkan air asam jawa. Add the fried serai and bawang back in
4) Pecahkan telur and leave until half cooked before stirring until the eggs are fully done
5) Salt and sugar to taste and add the fried crabs. Mix well
