Chocolate Mud Cake

Ingredients
Cake
250g butter, chopped
200g dark chocolate, chopped
2 cups of castor sugar
2 eggs
1 cup self raising flour
1 1/2 cup plain flour
1/4 cocoa powder
1/4 cup of water
Chocolate Ganache
2/3 cup of thickened cream
200g baking milk chocolate, chopped
Instructions
Cake
1) Preheat the oven to 180'c and grease an 8-inch springform
2) Melt butter, dark choc and sugar together in a pot. When they're well blended, add in the water slowly while stirring so that the chocolate doesn't split. Stir until all the sugar has dissolved
3) Pour into a big mixing bowl and add in the eggs. Sift both the flours an cocoa powder and pour slowly into the wext mix. 1 cup at a time. You can just stir manually, no need for an electric mixer
4) When all the ingredients are combined, pour the batter into the spring form and pop in into the oven for 50 mins or until a toothpick comes out clean. Let it cool in the tin for about 10 minutes before transferring to a cooling rack or to a different plate
Chocolate Ganache
1) Heat the cream in a pot on low heat
2) Add in the milk chocolate and stir until well blended. Wait for both the cake and ganache to cool before frosting the cake
3) Keep any leftovers in the fridge in an airtight container. You can use them to make drizzles on cookies
