Chocolate Cheese Cupcakes

2 cups all purpose flour
1 cup cocoa powder
2 tsp baking powder
1 tsp salt
175g butter, softened
1.5 cup castor sugar
2 eggs
1.5 tbsp sour cream
1 cup water
2 tsp vanilla extract
150g cream cheese, softened
4 tbsp castor sugar
6 tbsp semisweet chocolate chips
Chocolate Topping
1/2 cup semi sweet chocolate
50g butter
3 tbsp icing sugar
Instructions
Cupcakes
1) Preheat oven to 180'c
2) Sift flour, cocoa powder, baking powder and salt in medium bowl
3) In a large bowl, cream together butter and castor sugar (1.5 cups) for about a minute until smooth and fluffy. Then whisk in the eggs until well mixed
4) Gradually mix in the dry ingredients into the wet mix until well incorporated, leave aside about 3 tbsp of the dry mixture . Mix the sour cream and water in a separate bowl and then mix together with the batter, set aside
5) Mix 4 tbsp of chips with the 3 tbsp of the dry mix. Then fold into the cupcake batter
6) Cream the castor sugar (4 tbsp), vanilla extract and the cream cheese until smooth. Add in remaining 2 tbsp of the choc chips, set aside
7) In the cupcake papers, spoon in 1 tbsp of the cupcake batter to cover the bottom, followed by 1 tsp of the cheese mix in the middle, and top it off with another 1 tbsp of the cupcake batter
8) Bake for 20-25 minutes or until a pick comes out clean
9) Leave the cupcakes in the tray for a few minutes before transferring them onto a rack to cool completely
10) Melt the semi sweet chocolate with the butter for 1 minute in the microwave
11) Mix well with the icing sugar. Dip the top of the cupcakes into the mixture and leave to set.
