Salted Egg Chicken

300g chicken breast (cut to bite sizes)
3 tbsp potato starch
1 chicken egg
1/2 tsp black pepper powder
1/2 tsp salt
1/2 tsp sugar
4 salted egg yolks/ 3 tbsp salted egg powder
5 tbsp butter
4 small chillies
1/4 cup curry leaves
Instructions
1) Coat the chicken pieces with egg and season with black pepper, salt and sugar. Coat the chicken potato starch and deep-fry in batches. Set aside. (If you're using powder, move to step 3)
2) Remove the charcoal paste from the salted eggs and separate the white and the yolk. Steam the yolks for about 8 minutes and mash them while still hot.
3) In a wok, heat up butter and lightly fry the curry leaves and sliced chillies.
4) Add in the mashed salted egg yolks or salted egg powder and mix smoothly.
5) Keep stirring until the sauce turns from frothy to creamy. It should only take less than a minute. Then add in the fried chicken pieces. Coat the chicken with the sauce and remove from heat.
