Ingredients
300g dried maggi/broad noodles
3 red shallots
2 garlic cloves
2 tbsp udang kering
2 tbsp chilli paste
200g chicken meat (sliced or minced)
2 eggs
2 tbsp tomato sauce
5-6 tbsp sweet soy sauce
1 tsp fish sauce
Daun sup
2 small red chillies
Hot water
Salt and sugar
Instructions
1) Cook the noodles as per packaging instructions. Drain, run through cold water and set aside.
2) Chop or tumbuk the red shallots, garlic and udang kering. Saute until fragrant.
3) Add in chilli paste with 1 tsp of sugar. Cook until pecah minyak.
4) Add in the chicken meat and cook through.
5) Add in 1/2 cup of water, tomato sauce and soy sauce. Leave the sauce to simmer.
6) Add in eggs and scramble lightly when half-cooked.
7) Add in the cooked noodles, 1 cup of water and fish sauce. Mix thoroughly until the water has drained. Season with sweet soy sauce, salt and sugar to taste.
8) Mix in the daun sup and chillies before turning off the heat.
