Roast Chicken

Ingredients
1 whole chicken
1 tbsp coarse black pepper
15 cloves of garlic (minced)
125g butter
1 tbsp thyme
1 tbsp rosemary
1 tbsp oregano
1 lemon
5 cloves of garlic
2 sticks of carrot
3 potatoes
1 big brown onion

Instructions
1) Pre heat the oven to 200'c. 
2) Clean the chicken thoroughly and remove any excess fat.
3) Soften the butter in a microwave. Mix the minced garlic, black pepper, thyme, rosemary, oregano. Grate the lemon zest and mix together.
4) Coat the chicken with the butter mix. Be sure to slater under the chicken skin too.
5) Stuff the halved lemon and 5 garlic cloves inside the chicken. Place the chicken in the baking pan, breast side down.
6) Halve the brown onion and cut the carrots and potatoes into cubes. Arrange them around the chicken in the baking pan. 
7) Bake the chicken for 1 hour while basting the chicken with the butter juice every 15 minutes. After and hour, flip the chicken and continue roasting for another 45 minutes.
