Sardin Goreng

Ingredients
1 large tin of Ayam brand sardine
4 small green chillies
3 red shallots
2 cloves of garlic
1 tsp ginger
2 - 3 tbsp tomato sauce
Sweet soy sauce
Air asam jawa (1/2 tsp asam jawa + 1/4 cup of water) 
Salt and sugar to taste

Instructions
1) Separate the sauce and the halve the fish. Put in the fish sliced in an oiled wok before turning the heat on. Cover the wok with a lid to prevent mess.
2) Turn on the heat and let the sardines cook for about 10 mins on each side. I usually remove the wok from the heat to flip the fish so the oil won't splatter on my face.
3) Cook until slightly daring and set aside
4) In the same wok, add in a bit more oil and sauté the shallots, garlic and ginger until fragrant
5) Add in the sardine sauce, tomato sauce, air asap jawa and soy sauce sauce. Stir well and leave to simmer
6) Salt and sugar to taste before adding in the fried sardines and sliced chillies. Mix well and serve
