Ingredients
250g pasta
Olive oil
300g sliced chicken breast
Crushed black pepper
Salt
2 garlic cloves
1/2 cup sliced mushrooms
80ml pesto sauce (about half of a small bottle)
1/4 cup of parmesan cheese
Pasta water
Instructions
1) Cook the pasta as instructed by the package. Set aside 1 cup of pasta water and drain the pasta.
2) Heat up a pan and drizzle with olive oil in generous amount. Sauté the sliced chicken seasoned with salt and pepper until slightly browned. Drizzle more olive oil if needed.
3) Add in the chopped garlic and sliced mushroom. Continue to sauté until the mushrooms are cooked through.
4) Add in the pesto sauce with 1/2 cup of pasta water and leave to simmer.
5) Add in the pasta and parmesan cheese. Incorporate well with the sauce and chicken. Drizzle more olive oil before turning off the heat.
6) Garnish with parmesan cheese.
