Ingredients
Crust
2.5 cups crushed Oreos
75g melted butter
Cheesecake
600g cream cheese
2/3 cup castor sugar
2 tsp vanilla essence
2 1/4 cups heavy whipping cream
15 Oreos (roughly broken)
1/2 cup crushed Oreos
Chocolate topping
2/3 cup semi sweet chocolate
1/2 cup heavy whipping cream
Instructions
1) Make sure the cream cheese is warmed to room temperature.
2) Mix the melted butter with the crushed Oreos. Press down the crust mixture into the bottom of a 9-inch cake pan.
3) In a mixer, mix the cream cheese, castor sugar and vanilla essence on medium to high speed for 4-5 minutes until smooth.
4) Add in the whipping cream and start mixing on low speed. Continue mixing on medium to high speed for 4-5 minutes until smooth and creamy.
5) Add in the broken and crushed Oreos. Fold until fully incorporated. Pour into the pan. Tap the pan a few times to release any bubbles.
6) Melt the semi sweet chocolate and whipping cream in the microwave for 30-40 seconds.
7) Slowly mix the cream and chocolate slowly with a spoon until it thickens and becomes smooth.
8) Pour on top of the cheesecake and carefully spread it around.
9) Chill overnight.
