Tomyam Fried Rice

Ingredients
2 pots of cooked rice (cooled)
3 red shallots
2 garlic cloves
2 lemon grass
200g chicken meat
2 tbsp tomyam paste
1 cup water
2 eggs
1/2 cup long beans
5 lime leaves (cut half)
2 red chillies
1-2 tbsp sweet soy sauce
1 tbsp fish sauce
Salt and sugar

Instructions
1) Sauté the shallots, garlic and lemongrass until fragrant.
2) Add in the chicken and stir until cooked through.
3) Add in the tomyam paste and water. Mix well with 1 tbsp sugar and leave to simmer.
4) Add in eggs, let it cook half way before scrambling lightly.
5) Add in rice, sweet soy sauce, fish sauce, green beans, lime leaves and chillies. Mix well. Salt and sugar to taste.
