Stir-fry Beef

Ingredients
300-400 thinly sliced beef
2 potatoes (sliced thin)
3 red shallots
2 garlic cloves
3 tbsp oyster sauce
2 tbsp sweet soy sauce
1 tsp crushed black pepper
1 tsp red pepper flakes
1/2 cup green beans
1/2 cup water
Salt and sugar to taste

Instructions
1) Deep fry the potatoes until golden brown. Set aside.
2) Reduce the oil and add in the beef. Lightly fry until the liquid has dried up. Salt and pepper the beef to taste.
3) Add in the red shallots and garlic cloves, saute until fragrant.
4) Add in the sauces, black pepper and red pepper flakes. Mix well.
5) Add in the green beans and water. Let the beans cook through. 
6) Add in the fried potatoes and incorporate well. Salt and sugar to taste.
