Kam Heong Chicken

Ingredients
3 - 4 pieces of chicken
1 tbsp cornstarch
1/2 tsp black pepper
1/2 tsp salt
3 red shallots
2 garlic cloves
1 stalk of curry leaves
2 tbsp curry powder
2 tbsp chilli sauce
2 tbsp tomato sauce
2 tbsp oyster sauce
2 tbsp sweet soy sauce
1/2 cup water
2 small chillies
Salt and sugar to taste

Instructions
1) Pat the chicken dry and season with black pepper and salt. Coat with cornstarch, deep fry until cooked through, set aside. 
2) Sauté the chopped shallots, garlic and curry leaves until fragrant. Then add in the curry powder and 1/4 cup water, leave to simmer. 
3) Add in sauces and water gradually until you like the consistency of the sauce. Add in the fried chicken and chillies. 
4) Salt and sugar to taste.
