Ayam Masak Merah

Ingredients
1/2 chicken
3 red shallots
2 garlic cloves
1 tsp ginger
3 tbsp chilli paste
3-4 tbsp tomato sauce
2-3 tbsp chilli sauce
Water
Turmeric powder
Salt and sugar

Instructions
1) Marinate the chicken with turmeric powder and salt. Deep fry and set aside.
2) Blend or finely chop the shallots, garlic and ginger. Sauté until fragrant.
3) Add in the chilli paste and 1 tbsp of sugar. Cook until 'pecah minyak'.
4) Add in 1 cup of water and the sauce. Stir well and leave to simmer for about 10 minutes.
5) Gradually add more sugar and water to get your preferred level of heat.
6) Add in the fried chicken and mix well. Salt and sugar to taste.
