Thai Beef Noodle

Ingredients
1 pack of rice noodles
200g thinly sliced beef
3 red shallots
2 garlic cloves
1 tbsp Thai chilli paste
1 cup of water
2 eggs
Sweet soy sauce
Chinese Parsley
Salt and sugar

Instructions
1) Boil the rice noodles according to packaging instructions. Set aside.
2) Heat up a wok without oil, add in the thinly sliced beef. Cook until the liquid from the beef dries up and the beef is tender.
3) Add in some vegetable oil and add in the sliced shallots and garlic. Saute until fragrant.
4) Add in the Thai chilli paste, incorporate well with the beef. Add in water and leave to simmer.
5) Add in the eggs and lightly scramble when half cooked.
6) Add in the cooked noodles, mix in soy sauce, salt and sugar to taste. 
7) Stir in the chopped Chinese parsley before turning off the heat.
